Peppers, Corn, and Scallion Salsa

Ingredients:

  • 1 each red, yellow, green bell pepper diced
  • 1 cup cooked corn kernels
  • 1 bunch green onions, finely minced
  • 1 large clove garlic, minced
  • 2 Tbsp red wine vinegar
  • 1 Tbsp brown sugar
  • 1 Tbsp fresh basil leaves torn
  • 2 Tbsp olive oil
  • Fresh ground pepper to taste

Variations:

  • Add 1 cup black beans and fresh Italian herb mix to taste (oregano, thyme, parsley)
  • Mix all ingredients and let stand at least 1 hour before serving. Makes 3 cups.

Serving Suggestions:

  • Roasted pork tenderloin or grilled chicken
