Ingredients:
- 1 each red, yellow, green bell pepper diced
- 1 cup cooked corn kernels
- 1 bunch green onions, finely minced
- 1 large clove garlic, minced
- 2 Tbsp red wine vinegar
- 1 Tbsp brown sugar
- 1 Tbsp fresh basil leaves torn
- 2 Tbsp olive oil
- Fresh ground pepper to taste
Variations:
- Add 1 cup black beans and fresh Italian herb mix to taste (oregano, thyme, parsley)
- Mix all ingredients and let stand at least 1 hour before serving. Makes 3 cups.
