Variation: Minty sauce for basting

Instructions:

  • 3 Tbsp chopped mint leaves
  • 1 Tbsp sugar
  • 3 Tbsp wine vinegar
  • Puree
  • Whisk in 2-3 Tbsp of olive oil for an emulsion. Allow flavors to blend for 30 minutes before using.

Serving Suggestions:

  • With brush apply sauce to chicken pieces or eggplant slices when grilling.
